AI-powered coffee roasting system launched for the first time in Vietnam
Vietnam’s coffee roasting industry is undergoing a major transformation as advanced technology and automation begin to replace traditional manual processes. Among these changes, artificial intelligence (AI) has emerged as an inevitable trend.

In November 2025, Mars Roaster marked a new milestone by officially installing and commissioning the first AI-integrated Mars V5 coffee roasting system in Vietnam, located at a major coffee production facility in Gia Lai Province. This project represents a crucial step toward standardizing quality, enhancing productivity, and elevating Vietnamese coffee on the global stage.
For this initiative, Mars Roaster continued its long-term partnership with a strategic client, a large-scale coffee producer in Gia Lai with whom the company has collaborated for seven years. With over 30 years of experience, this enterprise sources green coffee beans directly from local farmers and operates a fully integrated production line with a daily capacity of 300–400 tons.

The project features two AI-powered Mars V5 roasters with a combined capacity of 60 kg per batch: one upgraded from the previous industrial automatic model that has operated reliably for over seven years, and one brand-new unit. Both are managed by a centralized AI control system.
In addition, Mars Roaster installed four green bean silos, four roasted coffee silos, two afterburner smoke treatment systems, and a synchronized set of destoning and blending equipment. The entire setup is designed to optimize the full production workflow — from loading and roasting to cooling, smoke filtration, storage, and blending.
The Mars V5 system introduces a technological breakthrough for the coffee industry, addressing key challenges through three core innovations: AI synchronization for consistent roasting profiles and flavor stability; advanced CE & ISO 13849-certified safety sensors for reliable operation; and smart management platform that enables 10-year data storage, batch traceability, remote IoT monitoring — paving the way for a new era of modern, sustainable roasting.

Gia Lai – The beginning of AI-powered coffee roasting in Vietnam
The launch of the Mars V5 AI roasting system in Gia Lai holds special significance. As the central hub of Vietnam’s Central Highlands coffee industry, Gia Lai symbolizes the essence of Vietnamese coffee.
This project marks not only a technological leap but also the beginning of AI adoption across the national coffee sector.
In 2026, the Gia Lai enterprise is set to open a dedicated Mars V5 AI Experience Showroom, where visitors can explore smart roasting in action and enjoy the region’s signature coffee flavors.
