In coffee production, post-roast quality is not determined by the roaster alone. Green coffee must be properly stored and dosed, roast profiles must be managed, and roasted coffee must be cleaned, stored, and prepared for the next stages of production.
Through its collaboration with Liên Việt Green, Mars Roaster has deployed a MARS 15 AI coffee roasting system powered by MARS V5 technology. The solution follows the movement of materials throughout the process, from green coffee storage and feeding to roasting, destoning, roasted coffee storage, and preparation for blending.
The project goes beyond installing a 15 kg batch coffee roaster. It is designed to connect equipment, technical expertise, and data within an operating process aligned with Liên Việt Green’s product development activities.

Liên Việt Green operates in the supply and export of Vietnamese specialty coffee while also developing roasted coffee, drip coffee products, and OEM and ODM solutions for businesses.
Within this business model, green coffee may vary by variety, growing region, processing method, and sensory characteristics. Each coffee requires a suitable roast profile rather than a single recipe applied across all products.
The challenge is therefore not limited to producing one successful batch. The business must also control the amount of green coffee loaded into each batch, record the technical decisions made during roasting, and organize roasted coffee according to different products or blend formulas.
Liên Việt Green has established expertise in coffee roasting, Arabica and Robusta quality evaluation, brewing, and R&D. In this environment, technology does not replace the people behind the process. Instead, it helps translate their experience and technical decisions into data that can support further product development and process transfer.
The system at Liên Việt Green is organized around the movement of coffee through the production process rather than treating each machine as a separate component.
At the beginning of the process, green coffee is stored in silos and weighed according to the required batch size. Once dosed, the coffee is automatically transferred to the MARS 15 AI roaster, connecting material feeding with the established roasting plan.
The MARS 15 AI performs the roasting process and manages roast profiles through MARS V5 technology. After roasting, the coffee passes through a destoner to remove stones and other dense foreign materials before being transferred to the storage area.
Roasted coffee storage silos allow the business to organize coffee by type, roast profile, or production purpose. From these silos, the coffee can be weighed and discharged for blending according to the requirements of each product line.
Alongside the material flow, the smoke treatment system is integrated with the roaster to handle smoke generated during operation. This brings green coffee storage and feeding, roasting, post-roast handling, and exhaust treatment together within one production system.
The value of the system lies not in the number of machines installed, but in how the stages before, during, and after roasting are connected into a clearly organized operating flow.

Green coffee storage, weighing, and feeding system at Liên Việt Green
The MARS 15 AI has a 15 kg batch capacity, uses 100% hot-air heating technology, and supports two operating modes: intelligent automatic and manual.
In manual mode, roasting professionals retain control over operating parameters when testing green coffee or developing new products. Once a roast profile has been finalized, automatic mode supports the execution of the established process in subsequent batches.
The MARS V5 control system supports unlimited roast profile storage. Roasting data can be monitored and managed on a computer through Artisan software, enabling the technical team to build a dedicated profile library for different coffees and product lines.
The control system uses a PLC and a Beckhoff control screen, allowing operators to monitor the roasting process and select the operating method appropriate for each production objective.
With its 15 kg batch capacity, the MARS 15 AI allows businesses to organize production according to coffee type, roast profile, or customer order while retaining the flexibility required for R&D.

Mars Roaster does not develop MARS V5 to remove the role of roasting professionals. They remain responsible for evaluating green coffee, defining flavor objectives, and making the technical adjustments required for each product.
